Vitalized Peach Butter

Happiness is a basket of fresh peaches that you nurtured and picked with love.

There is something special about planting a peach tree and watching it grow over a few years. From the moment I picked out the peach tree, I felt grateful. My husband and I planted it about 20 feet in front of our kitchen window three years ago. Every time I am in the kitchen I glance at it with admiration. This year was its most bountiful harvest and I knew exactly what I wanted to make with it… You guessed it Peach Butter!!

Below is my recipe. I am not a fan of added sugars, however, I did add a few teaspoons of local honey, vanilla extract, lemon juice, and cinnamon to spice it a little.  Next time I will make this in the crock-pot. It was almost 100 degrees when we made this so we opted for the stove-top recipe.

You can blend this to your preferred consistency and even peel the skin. I kept the peach skin on and only pulsed it a little for chunkier-style peach butter.

Vitalized Peach Butter

Vitalized Peach Butter is a flavorful low-sugar sweet topping or side.

Ingredients

  • 9 cup fresh peaches
  • 3 tsp lemon juice
  • 3 tsp local honey
  • 3 tsp vanilla extract
  • 3 tsp cinnamon or pumpkin pie spice

Instructions

  • Slice peaches open and remove the pit. It is optional to peel the skin. I left mine on.

  • Place 9-cups of peaches in a blender. Add in lemon juice, honey, vanilla extract, and cinnamon or pumpkin pie spice. You can always add more flavor so I suggest starting with 3 teaspoons of each. Pulse to your desired consistency. Place in a large bowl and simmer on the stove-top for at least 75-minutes and until sauce thickens. Stir frequently and adjust the flavors to your preference. Cook to desired level of thickness.

  • Serve warm, can in a mason jar, or place in a seal-tight lid and enjoy within 2-weeks. As you can see, I like some texture to my peach butter, if you want it completely smooth blend it to smoothness. Either way, it is delicious! Enjoy!!
